This is a dinner we have honestly about once a week. It’s an all-time favorite, even the kids love it. Particularly, Emma. She says it’s her favorite meal and she’s a picky toddler. So, if you’re wondering if your toddler will eat this. The answer is, yes! This is an easy and healthier option to make for dinner. This meal takes 45 minutes to make for reference.
INGREDIENTS:
- 3 Tablespoons olive oil
- 3-4 medium sweet potatoes
- 1 teaspoon salt
- 1 teaspoon garlic salt
- 1/2 teaspoon pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon parsley
- 4 eggs
- Turkey kielbasa (regular kielbasa will work too)13 oz
- 3/4 cup shredded cheddar cheese
INSTRUCTIONS:
Add olive oil to the bottom of a frying pan. Cube sweet potatoes into 1″ size pieces. Place into the frying pan. Add salt, garlic salt, pepper, onion powder, and parsley to the sweet potatoes. Cook sweet potatoes over medium heat for about 20-30 minutes. Until the sweet potatoes start to become crispy.
While sweet potatoes are cooking. Cube the kielbasa into bite-size pieces. Place into a bowl and set aside. After sweet potatoes are done cooking. Add in your cubed kielbasa. Cooking for another 8 minutes.
With your cooking spoon. Separate the mixture and make 4 holes. Then, break your eggs and place each one into its own hole. Sprinkle cheddar cheese on top. Cover with a lid and cook until the eggs are cooked through. About 5 minutes.
Remove from heat and allow 10 minutes to cool before serving.
