INGREDIENTS
1/4 cup shredded parmesan cheese
1/2 cup mozzarella cheese
1 bag frozen cauliflower gnocchi
2-3 medium zucchinis
2-3 Tbs. Olive oil
Salt/pepper
1 24 oz marinara sauce
Fresh parsley, chopped (optional)
INSTRUCTIONS
Add 1 tsp olive oil to a cooking pan. Cook cauliflower gnocchi until slightly crispy on the outside. Set aside.
Saute zucchini in 1-2 Tbs olive oil, season with salt/pepper (measure with your eye). Remove from heat, place in a medium-size bowl, and set aside. Heat up the marinara sauce in the pan you just sauteed the zucchini in until warm.
Add in cauliflower gnocchi, zucchini, parmesan, and mozzarella cheese into marinara sauce. Simmer on medium heat for 2-3 minutes. Sprinkle with fresh parsley if desired.
